Porcupine Meatballs

This is one from my youth.  It hasn’t been made as often for our kids.  More of a “meat and potato” era main course.

1 ½ lbs Ground Meat

½ C Minute Rice

1 teas Salt

½ teas Pepper

1 T Minced Onions

1Small can tomato soup

½ C Water

Wash rice.  Combine meat, rice, salt, pepper and onions.

Shape into small balls.  Heat soup and water in skillet or crock pot.

Drop meat balls in soup mixture.  Cover and cook until done.

(I like two cans of tomato soup for more juice.)
